Quinoa Salsa Chicken

2 cups cooked quinoa
1 cup cooked basmati rice
1 tablespoon oil
¼ cup chopped almonds
8 chicken thighs, skin removed
2 garlic cloves, minced
1 1/2 cup Old El Salsa
¼ cup water
2 tablespoons dried currants, dried cherries or raisins
1 tablespoon honey
¾ teaspoon cumin
½ teaspoon cinnamon
Cook quinoa and rice as directed on package
Heat oil in large sauté pan over medium high heat until hot. Add almonds, cook 1 to 2 minutes or until brown. Remove from skillet, set aside.
Add garlic and chicken to sauté pan. Cook 4 to 5 minutes until chicken is browned, turning once
In small pan, combine salsa and all remaining ingredients; mix well. Add to chicken. Reduce heat to medium, cover and cook 20 minutes or until chicken is no longer pink, stirring occasionally.
Stir in almonds. Serve over Quinoa and Rice
What’s Quinoa? Although not a common item in most kitchens, quinoa is a seed that has a fluffy, creamy, slightly crunchy texture. Most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard. Once called “the gold of the Incas” since it tends to increase ones stamina.
